    Coconut Berry Cupcakes Recipe


    Coconut Berry Cupcakes

    Yield: 8 cupcakes


    • 2 medium eggs
    • 70g coconut sugar (or a sweetener of your choice)
    • 60g coconut oil
    • 60g self rising flour
    • 60g berries
    • !optional! Poppy seeds


    1. Preheat your oven to 150c
    2. Place the two eggs into the bowel and add in the coconut sugar.
    3. Whisk well.
    4. Melt the coconut oil and add into the mixture.
    5. Fold in the flour slowly, whisking as you go along. Mix well.
    6. Add in the berries and optional poppy seeds.
    7. Place into a cupcake baking tray and bake for around 25 minutes or until golden brown.

This has been a new struggle for me because I had always been someone who avoided buying junk food. When it is there, sitting so beautifully in your office – how can you resist?!
